35% Honduras: Smooth, nutty base and rich chocolate notes.Grown by Jorge Isaac Hernandez, a dedicated member of the Marcala Co-operative.

30% Peru: Deep sweetness and syrupy body.Sourced from high-altitude farms in the northern region.

Farming & Processing: The Art of the Perfect Dry

Mont58 prioritises traceable, high-quality beans, ensuring that every farmer is an integral part of the process.

  • The Farmer: The Honduran component comes directly from Jorge Isaac Hernandez, who has been a valued member of the Marcala Co-op (COMSA) since 2018. This co-op is famous for its commitment to organic farming and innovative quality control.

  • The Mill: All the processing for these beans takes place at the Aruco Mill in Pomalca, Peru. This mill is strategically located to receive parchment from both Colombia and Peru, where the drier weather allows for better drying control.

  • The Washed Process: The coffee cherry is meticulously cleaned, washed, and then taken to the drying beds.

  • The Quality Secret (Long Drying): The beans are dried slowly for an extended period of 20–30 days. This long, consistent drying time, which is far longer than typical, is a specialised technique that stabilises the bean's structure, locks in natural sugars, and results in the incredibly clean, rich, and bittersweet notes of dark chocolate and sugar cane that define this award-winning blend.

Recommended Brew Methods

The medium-dark roast is designed for maximum flavour delivery across multiple brewing styles, from espresso to your favourite stovetop method.

Stovetop (Moka Pot) - Fine Medium: The ideal brew method. Fill the coffee holder loosely (do not tamp!) to allow the pressure to build slowly, extracting the full punchy flavour.

Espresso - Fine: Yields a syrupy, bold shot with excellent body and rich crema. Perfect for Lattes, Cappuccinos, and Flat Whites.

Cafetière (French Press) - Coarse: A 4-minute steep time is all that's required to bring out the bold dark chocolate notes and smooth, substantial body.

About The Roastery

Mont58 Coffee is the passion project of husband-and-wife team, Shai and Maya. Their journey began quite literally at home in 2018, when they took the plunge and jacked in their full-time jobs to start roasting coffee in a humble garden shed in South-East London. Shai, whose passion for coffee was sparked by childhood memories of drinking cardamom-spiced coffee with his grandfather, honed his craft on a tiny 250g machine.

This small-batch venture quickly took off, especially during the lockdown when the local community wholeheartedly embraced their door-to-door, bike-delivered coffee.

While they have since scaled up to a larger roastery in Ashford, Kent, and opened further sites, the spirit of that original shed, small business, big heart, remains central to their award-winning, ethical, and community-focused mission. It's a proper 'started from the ground up' success story, but with significantly better beans.
