Origin & Farm: The Cajamarca Collective
This single origin represents the collective efforts of a community, sourced from the highly reputable, high-altitude provinces of Jaen and San Ignacio in Cajamarca, Northern Peru.

The Producer: The coffee is a carefully managed blend of coffees from 12 different producers, all smallholder farmers. The blend itself is named after a town that sits strategically between the two provinces, signifying unity and regional identity.

The Terroir: Cajamarca is situated in the Peruvian Andes, boasting an ideal temperate, dry climate and high altitudes, typically between 1,200 and 1,950 metres above sea level. This cool environment ensures slow cherry maturation, which is crucial for developing the bean's complexity, resulting in its natural citric acidity and depth of flavour.

The Varietals: The farms in this region predominantly cultivate high-quality Arabica varietals such as Bourbon, Typica, and Caturra, which are the backbone of Peru's speciality coffee reputation.
Farming Process & Quality Commitment
The quality of this lot is built on the farmers' dedication to rigorous on-farm processing and a transparent, ethical payment model.

Processing at the Source: Producers in Northern Peru maintain their own processing equipment, using a hand pulping machine and fermentation tank for traditional, high-quality processing.

The Washed Process: The beans undergo the Fully Washed method. This process involves fermentation (typically 12–24 hours) followed by washing, which is essential for achieving the clean flavour profile—highlighting the chocolate and dried fruit notes without any unwanted earthiness.

Drying: After washing, the beans are sun-dried on the producer's own patio or raised beds on their farms.

Ethical Quality Control: The co-operative model ensures exceptional ethical standards. Once dry, the coffee is meticulously analysed, cupped, and graded, and producers are paid in full the same day. This commitment to immediate, full payment incentivizes high quality and supports the financial stability of the smallholder farmers.

Espresso: Use a Fine grind (Optimal Method). This coffee is tailored for espresso, providing a rich, chocolaty, bittersweet shot with a consistent crema, making it the perfect base for milk-based drinks like a Flat White or Cappuccino.

About The Roastery
Mont58 Coffee is the passion project of husband-and-wife team, Shai and Maya. Their journey began quite literally at home in 2018, when they took the plunge and jacked in their full-time jobs to start roasting coffee in a humble garden shed in South-East London. Shai, whose passion for coffee was sparked by childhood memories of drinking cardamom-spiced coffee with his grandfather, honed his craft on a tiny 250g machine.

This small-batch venture quickly took off, especially during the lockdown when the local community wholeheartedly embraced their door-to-door, bike-delivered coffee.

While they have since scaled up to a larger roastery in Ashford, Kent, and opened further sites, the spirit of that original shed, small business, big heart, remains central to their award-winning, ethical, and community-focused mission. It's a proper 'started from the ground up' success story, but with significantly better beans.
