Origin & Farm: The Slopes of Mount Wilhelm

This organic coffee is sourced from the remote and exotic Chuave district, centrally located within the vast New Guinea Highlands, close to the border of the Eastern Highlands Province.

  • The Terroir: The Highlands are a chain of majestic mountain ranges, and the coffee growing slopes that produce this bean are located on the Bismarck Range, which features Mount Wilhelm, the country's highest peak. This provides the ideal high-altitude climate for growing dense, flavourful beans.

  • Biodiversity: Papua New Guinea is internationally recognised as one of the world's 17 megadiverse countries, home to a vast wealth of unique flora and fauna. This rich environment contributes to the highly fertile soil and natural growing conditions of the coffee.

  • The Farm Structure: The vast majority of the coffee is grown by smallholder farmers in what are locally known as ‘coffee gardens’. These small plots, typically ranging from a few trees up to a three-hectare plot at most, are maintained entirely by the immediate family using traditional methods. Traditional plantations account for just under 20% of production.

Farming Process & Organic Certification

The traditional, natural farming methods used in the PNG Highlands have ensured this coffee is grown largely free of chemicals, leading to its Certified Organic status.

  • The Dry Fermentation Process: The processing is carried out at the local level with meticulous care:

    1. Once selectively hand-picked, the coffee cherry is pulped to remove the skin.

    2. The beans are then subjected to a dry fermentation for 24 hours in wooden or plastic boxes, which is essential for developing the clean profile.

    3. After fermentation, the coffee is rigorously washed and then moved to dry.

  • Drying on Sails: The coffee is dried traditionally on sails (stretched tarpaulin drying beds). This labour-intensive process requires constant turning to ensure a slow, even dry, resulting in the smooth, velvety mouthfeel.

  • Quality & Export: The coffee is then sold to collectors and taken to a renovated dry mill facility. Here, it is professionally processed, meticulously hand-sorted where necessary, graded, and bagged for export, achieving a Speciality Grade classification (often an A or AA grade).

The Medium Roast and Earthy, Velvety body of this PNG coffee make it highly versatile, performing exceptionally well in immersion methods that enhance its smoothness.

  • French Press (Cafetière): Use a Coarse grind (Optimal Method). The full immersion time perfectly enhances the Velvety, Smooth mouthfeel and brings out the Earthy base notes of the coffee.

  • Batch Brew / Filter: Use a Medium grind for an excellent, consistent all-day coffee. The balanced extraction delivers a clean, flavourful cup that highlights the underlying sweetness.

  • Moka Pot (Stovetop): Use a Medium-Fine grind for a rich, concentrated brew. This method delivers a full, satisfying cup that amplifies the deep, comforting characteristics of the blend.

About The Roastery

Mont58 Coffee is the passion project of husband-and-wife team, Shai and Maya. Their journey began quite literally at home in 2018, when they took the plunge and jacked in their full-time jobs to start roasting coffee in a humble garden shed in South-East London. Shai, whose passion for coffee was sparked by childhood memories of drinking cardamom-spiced coffee with his grandfather, honed his craft on a tiny 250g machine.

This small-batch venture quickly took off, especially during the lockdown when the local community wholeheartedly embraced their door-to-door, bike-delivered coffee.

While they have since scaled up to a larger roastery in Ashford, Kent, and opened further sites, the spirit of that original shed, small business, big heart, remains central to their award-winning, ethical, and community-focused mission. It's a proper 'started from the ground up' success story, but with significantly better beans.
