Sourced from the progressive co-operatives of Nayarit, this coffee is a highly traceable and ethically responsible single origin. Roasted to a perfect Medium level, it offers a beautifully balanced cup, rich with notes of comforting Chocolate, delicate Floral hints, vibrant Citrus, and a sweet Vanilla finish.

Origin & Farm: Grupo Terruño Nayarita (GTNAY)

This coffee is the product of Grupo Terruño Nayarita (GTNAY), a democratically structured enterprise dedicated to delivering consistently high-quality, traceable coffee from the State of Nayarit.

  • The Structure: GTNAY stockholders are independent, democratic coffee producing societies scattered throughout the region. These societies, which range in size from 15 to over a hundred producers, agree to implement proven best practices rather than competing with each other. This cooperative model ensures social and environmental responsibility and provides shared resources and better market access for all members.

  • The Terroir: Nayarit is Mexico's northernmost coffee-growing region in the Americas. The farms are located in the foothills of the Sierra de San Juan, where volcanic soil and the convergence of altitude (typically 900 to 1,400 metres above sea level) and a maritime climate create unique microclimates ideal for coffee cultivation.

  • The Varietals: The farms primarily cultivate high-quality Arabica varietals such as Catuai, Caturra, and Typica, which are the backbone of the region's classic Chocolate and Citrus profile.

Processing: Innovation at the Rustico Wet Mill

The meticulous attention to detail at the processing stage ensures this coffee's high quality and complexity, despite the mill's simple nature.

  • The Mill: The coffee is processed at the Rustico wet mill, located in the town of El Cuarenteño and owned and operated by the 25 members of the Altamirano family. The name Rustico is Spanish for rustic, reflecting the mill's simple and basic infrastructure.

  • The Innovation: Utilising bare-bones machinery and short on space, the innovative members utilise the very rooftops of their houses as coffee drying patios.

  • The Washed Process: Most of the coffee processed here uses the Fully Washed method. This process uses machines to remove the outer pulp and mucilage from cherries, before being placed on the patios to dry. This careful washing is essential for showcasing the inherent Citrus and Floral complexity of the Nayarit bean.

  • Quality Control: Despite the simple machinery, the care that goes into processing the beans ensures that coffees from El Rustico are often among the top lots on cupping tables, achieving Speciality Grade status.

The balanced Medium Roast and complex Floral and Citrus profile of this Mexican coffee shine best in methods that amplify clarity and highlight its subtle complexity.

Pour-Over (V60, Chemex): Use a Medium grind (Optimal Method) to maximize the Citrus acidity and delicate Floral notes, ensuring a clean, complex extraction.

Batch Brew / Filter: Use a Medium grind for an excellent, consistent all-day cup that smoothly balances the Chocolate depth with the refreshing acidity.

French Press (Cafetière): Use a Coarse grind and steep for 4 minutes. This immersion method will enhance the full body and bring the comforting Chocolate and Vanilla notes to the forefront.

About The Roastery

Mont58 Coffee is the passion project of husband-and-wife team, Shai and Maya. Their journey began quite literally at home in 2018, when they took the plunge and jacked in their full-time jobs to start roasting coffee in a humble garden shed in South-East London. Shai, whose passion for coffee was sparked by childhood memories of drinking cardamom-spiced coffee with his grandfather, honed his craft on a tiny 250g machine.

This small-batch venture quickly took off, especially during the lockdown when the local community wholeheartedly embraced their door-to-door, bike-delivered coffee.

While they have since scaled up to a larger roastery in Ashford, Kent, and opened further sites, the spirit of that original shed, small business, big heart, remains central to their award-winning, ethical, and community-focused mission. It's a proper 'started from the ground up' success story, but with significantly better beans.
