Origin & Terroir: Foothills of the Aberdares

This coffee's unique profile is inseparable from its prestigious growing region in Central Kenya:

  • The Region: The coffee is grown at the foothills of the Aberdare mountain range, which provides high altitudes, typically 1,500 to 2,000 metres above sea level, and cool, misty nights. This high elevation forces the coffee cherries to ripen very slowly, allowing the beans to develop the complex sugars and acidity that result in the famous "Kenyan zing."

  • The Soil: The beans thrive in deep red volcanic soils, which are rich in nutrients and organic matter. This fertile ground is essential, providing the necessary resources for the coffee trees to allocate energy to high-quality fruit production.

  • The Climate: Kiambu's temperate climate and "place of drizzles" (Kiambu means "place of drizzles") provide the gentle, consistent rainfall that Arabica trees need, leading to a vibrant and clean cup.

  • Varietals: Expect the classic Kenyan varietals like SL28 and SL34, which were developed specifically to enhance the blackcurrant, citrus, and wine-like acidity Kenya is famous for.

Farming & Processing: The Meticulous Washed Method

Kenyan coffee is revered globally for its meticulous processing standards, which bring out the clarity and brightness of the bean.

  • Farm Structure: The coffee is typically produced by smallholder farmers who deliver their selectively hand-harvested ripe cherries to a local Factory (Kenyan term for a washing station) often organised under a co-operative.

  • The Washed Process (Wet Milling): The coffee undergoes the Washed (or Wet) Process, which is standard for high-quality Kenyan lots:

    1. The cherries are pulped (skin and pulp removed).

    2. The beans are fermented to remove the remaining mucilage.

    3. Crucially, many high-end Kenyan coffees undergo a double-soaking and washing stage. This rigorous method ensures a perfectly clean bean, amplifying the fruity, zesty clarity in the final cup.

  • Quality Grading: After processing, the green beans are meticulously graded primarily by size. This single-origin is classified as the AA or AB grade, which refers to the largest, densest, and most uniform beans, the gold standard for a flavour-rich, even roast.

Recommended Brew Methods

The brightness and juicy body of Kenyan coffee shine best in methods that allow for clean extraction, showcasing its floral and stone fruit complexity.

Pour-Over (V60, Chemex): Use a Medium grind (Optimal Method) to showcase the bright acidity and floral aromas, using water up to 96°C.

Batch Brew / Filter: Use a Medium grind for an excellent, vibrant, flavour-forward all-day coffee with a clean, complex cup.

Aeropress: Use a Medium-Fine grind and a quicker brewing time (under 90 seconds) to create a juicy, syrupy body that carries the stone fruit sweetness.

About The Roastery

Mont58 Coffee is the passion project of husband-and-wife team, Shai and Maya. Their journey began quite literally at home in 2018, when they took the plunge and jacked in their full-time jobs to start roasting coffee in a humble garden shed in South-East London. Shai, whose passion for coffee was sparked by childhood memories of drinking cardamom-spiced coffee with his grandfather, honed his craft on a tiny 250g machine.

This small-batch venture quickly took off, especially during the lockdown when the local community wholeheartedly embraced their door-to-door, bike-delivered coffee.

While they have since scaled up to a larger roastery in Ashford, Kent, and opened further sites, the spirit of that original shed, small business, big heart, remains central to their award-winning, ethical, and community-focused mission. It's a proper 'started from the ground up' success story, but with significantly better beans.
