Origin & Farm Details: The Marcala-La Paz Difference
This single-origin coffee is cultivated in the mountainous, fertile slopes of Marcala-La Paz, a region renowned for producing some of Honduras's most acclaimed speciality beans.

The Co-operative: This coffee is proudly sourced from the COMSA co-operative (Café Orgánico Marcala), a community that has defied convention by focusing on sustainable, premium coffee. They maintain strict agricultural practices and champion the welfare of their smallholder farmers.

Altitude & Terroir: The beans thrive at high altitudes, typically between 1,200 and 1,700 metres above sea level. This high elevation creates cooler conditions, which naturally slows the ripening of the coffee cherry. This process allows the bean to develop a higher density and greater complexity, resulting in the rich, deep flavours you taste in the cup.

Varietals: Expect a blend of high-quality Arabica varietals, such as Catimor, Parainema, Catuai, and Caturra, specifically chosen to create a rich mouthfeel and smooth, balanced profile.
Farming & Processing: The Washed Method
The overwhelming majority of high-quality Honduran coffee uses the Washed (or wet) process, which is favoured for its clean, consistent results:

Hand Harvesting: Only the ripest, most vibrant red cherries are meticulously hand-picked by farmers, often returning to the same trees multiple times during the season.

Processing: The fruit pulp is immediately removed, and the beans are then fermented for a controlled period (typically 12–24 hours).

Washing & Drying: The beans are thoroughly washed to remove any residue and then sun-dried on traditional patios or raised beds to ensure a consistent moisture level. This method brightens the natural acidity and highlights the bean's inherent notes of nut and dark chocolate without interference from the fruit.

Recommended Brew Methods
The Medium-Dark roast level makes this coffee incredibly versatile, performing exceptionally well in both espresso and filter applications.

French Press (Cafetière) - Coarse: This immersion method is superb for a medium-dark roast, enhancing the coffee's full body and bringing the nutty, bittersweet notes to the forefront. Steep for 4–5 minutes.

Espresso - Fine: This single origin produces an excellent espresso shot, offering a syrupy, rich extraction that pairs perfectly with milk in a Flat White or Cappuccino.

Pour-Over (V60/Chemex) - Medium: A controlled pour-over highlights the clarity and complexity of the bittersweet notes. Use a slightly lower water temperature (approx. 90°C) to prevent bitterness.

About The Roastery
Mont58 Coffee is the passion project of husband-and-wife team, Shai and Maya. Their journey began quite literally at home in 2018, when they took the plunge and jacked in their full-time jobs to start roasting coffee in a humble garden shed in South-East London. Shai, whose passion for coffee was sparked by childhood memories of drinking cardamom-spiced coffee with his grandfather, honed his craft on a tiny 250g machine.

This small-batch venture quickly took off, especially during the lockdown when the local community wholeheartedly embraced their door-to-door, bike-delivered coffee.

While they have since scaled up to a larger roastery in Ashford, Kent, and opened further sites, the spirit of that original shed, small business, big heart, remains central to their award-winning, ethical, and community-focused mission. It's a proper 'started from the ground up' success story, but with significantly better beans.
