The Aruco mill plays a critical role in developing this coffee's smooth, rich flavour profile. By centralising the post-harvest processing at the mill, the Aruco Co-operative ensures a standard of quality and consistency that is difficult for individual smallholder farmers to achieve on their own. This move not only reduces risk for the producer—protecting the value of their hard work, but also guarantees every batch is treated with the same meticulous attention.
The Impact of Slow, Stable Drying on Flavour
The key feature of the Aruco mill is its unique location, situated at 800 metres above sea level (MASL). This altitude provides a drier, more stable climate than the higher-altitude farms where the beans are grown. This stability is crucial for the drying process. Unlike the unpredictable weather on the high slopes, the mill's climate allows for a very slow, controlled drying period of 20–30 days. This extended, even exposure allows the sugars and complex organic acids within the bean to stabilise, resulting in a beautifully balanced cup that features a rich, bittersweet, and nutty profile without any of the rough, uneven flavours that can result from rushed drying.

About The Roastery
Mont58 Coffee is the passion project of husband-and-wife team, Shai and Maya. Their journey began quite literally at home in 2018, when they took the plunge and jacked in their full-time jobs to start roasting coffee in a humble garden shed in South-East London. Shai, whose passion for coffee was sparked by childhood memories of drinking cardamom-spiced coffee with his grandfather, honed his craft on a tiny 250g machine.

This small-batch venture quickly took off, especially during the lockdown when the local community wholeheartedly embraced their door-to-door, bike-delivered coffee.

While they have since scaled up to a larger roastery in Ashford, Kent, and opened further sites, the spirit of that original shed, small business, big heart, remains central to their award-winning, ethical, and community-focused mission. It's a proper 'started from the ground up' success story, but with significantly better beans.
