Sourcing: The speciality-grade Arabica green beans are sourced from regions chosen specifically for their full-bodied, rich, and clean profiles (often Central or South America), which can withstand the decaffeination process without losing complexity.

The Original Process: The coffee is a Natural Process Decaf, meaning the fruit of the cherry was dried around the bean before decaffeination. This original process contributes significantly to the final creamy texture and sweetness that customers enjoy.

Decaffeination Process: Sparkling Water Method
The superior quality and high flavour retention of this decaf are down to the gentle, chemical-free Sparkling Water Decaffeination Process. This method is natural and organically certified.

Pre-Treatment: The green beans enter a vessel where they are cleaned and moistened with water to open the bean's pores, allowing the caffeine molecules to become mobile.

Extraction: Pressurised liquid carbon dioxide ($CO_2$) is circulated through the beans. When combined with water, this essentially forms sparkling water that acts like a highly selective magnet, drawing out the mobile caffeine molecules while leaving the heavier flavour compounds (oils, carbohydrates) intact.

Recycling & Certification: The caffeine-rich carbon dioxide is then separated in an evaporator, and the caffeine-free water is recycled for the next batch. This cycle is repeated until the required residual caffeine level is reached (meeting the strict EU standard of 99.9% caffeine-free). The absence of chemical solvents allows the process to be Organically Certified.

Drying: The decaffeinated beans are gently dried until they reach their original moisture content, preserving their cell structure and ensuring a smooth, consistent roast.
About The Roastery
Mont58 Coffee is the passion project of husband-and-wife team, Shai and Maya. Their journey began quite literally at home in 2018, when they took the plunge and jacked in their full-time jobs to start roasting coffee in a humble garden shed in South-East London. Shai, whose passion for coffee was sparked by childhood memories of drinking cardamom-spiced coffee with his grandfather, honed his craft on a tiny 250g machine.

This small-batch venture quickly took off, especially during the lockdown when the local community wholeheartedly embraced their door-to-door, bike-delivered coffee.

While they have since scaled up to a larger roastery in Ashford, Kent, and opened further sites, the spirit of that original shed, small business, big heart, remains central to their award-winning, ethical, and community-focused mission. It's a proper 'started from the ground up' success story, but with significantly better beans.
