Origin & Farm: The High Peaks of Huehuetenango

This exceptional coffee is a testament to the dedication of the Todosantarita Co-operative, located in the famous Huehuetenango municipality of Guatemala's Western Highlands.

  • The Co-operative: The Todosantarita co-op represents numerous smallholder farmers who uphold strict organic and quality standards. The co-op provides crucial support, processing facilities, and ethical market access for beans that qualify as Speciality Grade.

  • Altitude & Classification: Huehuetenango is famous for producing Strictly Hard Bean (SHB) coffee, meaning the beans are grown at extremely high altitudes, typically 1,500 to 2,000 metres above sea level. This cool, high-elevation environment is crucial for slow-maturing the beans, which develops the dense structure required for the lovely depth and classic flavour.

  • The Terroir: Unlike other regions, Huehuetenango is sheltered from coastal influences, giving it a unique, dry, and cool microclimate that is highly consistent and ideal for cultivating high-quality Arabica.

Farming Process & Organic Certification

The beans are grown with high ethical standards and the rigorous processing required to achieve both the Organic Certification and the famous Huehuetenango cup profile.

  • Organic Farming: The farmers within the co-op adhere to stringent guidelines, using no synthetic fertilisers or pesticides. This commitment to traditional, chemical-free methods ensures the coffee is Certified Organic.

  • Varietals: The farms primarily cultivate high-quality Arabica varietals such as Bourbon, Caturra, and Catuai, which are essential for the balance of Cherry fruit notes and Chocolate sweetness.

  • The Washed Process: To achieve the milk chocolate creaminess and classic finish, the coffee undergoes the Fully Washed method. This process involves fermentation, washing, and controlled drying on patios or raised beds, ensuring a clean cup that showcases the bean's inherent sweetness and mild fruit acidity.

Recommended Brew Methods

The balanced Medium Roast and classic, creamy profile of this organic coffee make it highly versatile, performing beautifully across all popular brewing methods.

Batch Brew / Filter: Use a Medium grind (Optimal Method) to produce a clean, consistent all-day cup that maximizes the comforting Milk Chocolate Creaminess and sweetness.

French Press (Cafetière): Use a Coarse grind and steep for 4-5 minutes. This immersion method enhances the lovely depth and full body, bringing the complex Chocolate notes to the forefront.

Espresso: Use a Fine grind. This coffee is an excellent choice for espresso, providing a classic, balanced shot that is particularly smooth and sweet when mixed with milk for a Flat White or Latte.

About The Roastery

Mont58 Coffee is the passion project of husband-and-wife team, Shai and Maya. Their journey began quite literally at home in 2018, when they took the plunge and jacked in their full-time jobs to start roasting coffee in a humble garden shed in South-East London. Shai, whose passion for coffee was sparked by childhood memories of drinking cardamom-spiced coffee with his grandfather, honed his craft on a tiny 250g machine.

This small-batch venture quickly took off, especially during the lockdown when the local community wholeheartedly embraced their door-to-door, bike-delivered coffee.

While they have since scaled up to a larger roastery in Ashford, Kent, and opened further sites, the spirit of that original shed, small business, big heart, remains central to their award-winning, ethical, and community-focused mission. It's a proper 'started from the ground up' success story, but with significantly better beans.
