Origin & Farm: The Puyango Canton Community
This coffee is a community lot, representing the collective effort and tradition of dedicated smallholder farmers in the Puyango region, Loja Province.

The Region: The beans are grown in the mountainous Puyango canton (part of the larger Loja region). The area is characterised by rolling hills, lush green valleys, and the meandering Puyango River, all set against a stunning backdrop of natural beauty. This terrain, with altitudes often ranging from 1,400 to 1,800 metres above sea level, provides the ideal cool climate for slow cherry maturation.

The Soil: The fertile soil and favourable climate make it an ideal location for coffee production. Coffee is a vital part of the local economy, providing livelihoods for many residents who maintain traditional, sustainable agricultural practices.

The Varietals: The community farms in this area typically cultivate classic, high-quality Arabica varietals, including Typica, Bourbon, Caturra, and Sarchimor. These varietals are essential for the clean, complex, and intensely sweet flavour profile you taste.
Farming Process & Quality Control: Washed Excellence
To achieve the clean clarity required for notes like Orange Marmalade and Redcurrant, the coffee in Puyango is meticulously processed, often with support from quality-focused exporters.

Selective Harvesting: All coffee is selectively hand-harvested, with farmers (often second and third-generation producers) returning multiple times to pick only the ripest cherries.

The Washed Process: This coffee is produced using the Washed (or Wet) Process, which is standard for high-quality Puyango lots:

The cherries are pulped (skin and fruit removed) and then fermented in tanks, often for around 14–24 hours.

The coffee is thoroughly washed to remove all mucilage, ensuring a clean cup profile.

Drying & Quality: The beans are then dried on traditional clay patios or raised beds for up to 20 days. This careful, slow drying is crucial for developing and locking in the intense fruit and citrus sweetness, guaranteeing a Speciality Grade classification.

About The Roastery
Mont58 Coffee is the passion project of husband-and-wife team, Shai and Maya. Their journey began quite literally at home in 2018, when they took the plunge and jacked in their full-time jobs to start roasting coffee in a humble garden shed in South-East London. Shai, whose passion for coffee was sparked by childhood memories of drinking cardamom-spiced coffee with his grandfather, honed his craft on a tiny 250g machine.

This small-batch venture quickly took off, especially during the lockdown when the local community wholeheartedly embraced their door-to-door, bike-delivered coffee.

While they have since scaled up to a larger roastery in Ashford, Kent, and opened further sites, the spirit of that original shed, small business, big heart, remains central to their award-winning, ethical, and community-focused mission. It's a proper 'started from the ground up' success story, but with significantly better beans.
