Origin & Composition: The South American Powerhouse
This signature blend combines beans from two distinct South American origins, carefully chosen for their complementary strengths when dark roasted.

Brazil (For Body and Caramel): Typically sourced from the Minas Gerais region, this component provides the essential full body, smooth texture, and nutty-caramel sweetness. Brazilian beans are naturally lower in acidity and denser, making them ideal for a dark roast.

Peru (For Cocoa and Balance): Sourced from the Northern Peruvian Highlands (like Cajamarca), this component adds complexity, a desirable Cocoa note, and provides a balanced acidity that prevents the dark roast from tasting flat or woody.
Processing & Quality Control
The dark roast is executed with care to enhance the deep flavours without scorching the beans, which is confirmed by the lack of surface oil.

Processing Method: The blend is a strategic mix of processing styles: the Brazilian beans are often Pulped Natural (Honey) to boost body and sweetness, while the Peruvian beans are typically Fully Washed to ensure a clean cocoa finish.

The Dark Roast Advantage: The beans are roasted to a dark, uniform colour. This intense heat develops the sugars into rich Caramel notes and deep Cocoa flavours. Crucially, the absence of oily beans indicates a controlled and specific end temperature, preserving the bean's structure and ensuring a fresher taste for longer.

Bean Quality: Only high-density, 100% Arabica beans are used, selected for their ability to withstand the dark roast temperature while maintaining a smooth flavour and balanced acidity.
Recommended Brew Methods
This blend is perfectly designed for pressure and immersion brewing, delivering maximum flavour intensity and a brilliant espresso shot.
Espresso: Use a Fine grind (Optimal Method). This coffee will produce a brilliant shot with a full body and powerful adrenaline boost. It is perfectly suited for combining with steamed milk to create delicious Flat Whites, Lattes, and Cappuccinos.

Moka Pot (Stovetop): Use a Medium-Fine grind for a rich, highly concentrated brew. This traditional Italian method delivers the highest intensity and amplifies the deep Cocoa notes.

French Press (Cafetière): Use a Coarse grind and steep for 4 minutes. This immersion method ensures the full body is fully extracted, resulting in a rich, smooth cup with pronounced Caramel sweetness.

About The Roastery
Mont58 Coffee is the passion project of husband-and-wife team, Shai and Maya. Their journey began quite literally at home in 2018, when they took the plunge and jacked in their full-time jobs to start roasting coffee in a humble garden shed in South-East London. Shai, whose passion for coffee was sparked by childhood memories of drinking cardamom-spiced coffee with his grandfather, honed his craft on a tiny 250g machine.

This small-batch venture quickly took off, especially during the lockdown when the local community wholeheartedly embraced their door-to-door, bike-delivered coffee.

While they have since scaled up to a larger roastery in Ashford, Kent, and opened further sites, the spirit of that original shed, small business, big heart, remains central to their award-winning, ethical, and community-focused mission. It's a proper 'started from the ground up' success story, but with significantly better beans.
