Origin & Farm: The Andean Slopes

This single-origin coffee is sourced from one of Colombia’s premier growing regions, likely the departments of Huila, Tolima, or Cauca, which are renowned for their high-altitude, fruity-sweet coffees.

  • The Farmer/Structure: The majority of speciality Colombian coffee is grown by smallholder farmers, typically working plots of land smaller than two hectares. These farmers are often members of regional co-operatives that provide technical assistance, quality control, and centralised processing facilities.

  • The Terroir: The beans are grown at high altitudes—often exceeding 1,600 metres above sea level. This slow maturation process in the cool, mountainous climate allows the bean to develop the dense structure and complex sugars that translate into the delightful Caramel and Cherry sweetness.

  • The Varietals: The farms primarily cultivate high-quality Arabica varietals such as Castillo, Caturra, and Catuai. These varietals are robust and consistently deliver the balanced, chocolatey base expected from premium Colombian coffee.

Farming Process & Quality Control

Colombian speciality coffee is defined by its meticulous harvesting and processing, ensuring the clarity needed for its distinct flavour profile.

  • Selective Harvesting: All coffee is selectively hand-harvested throughout the year due to Colombia's two main crop seasons (the mitaca and the main harvest), ensuring only the ripest cherries are picked.

  • The Washed Process: To achieve the coffee's clean, classic finish and clarity, it undergoes the Fully Washed method. The beans are pulped, fermented (usually for 12–24 hours), and thoroughly washed before being sun-dried on covered parabolic beds. This process highlights the natural sweetness and bright Cherry notes.

  • Quality Grading: Colombian coffee is held to a high national standard. This lot is classified as Speciality Grade, ensuring it scores highly on the cupping scale and meets the rigid standards for size and defect control, resulting in a consistent and high-quality brew.

Recommended Brew Methods

The Medium Roast and balanced, sweet profile make this Colombian coffee exceptionally versatile, performing well across almost any method, especially those that enhance its milk chocolate creaminess.

Batch Brew / Filter: Use a Medium grind (Optimal Method) to produce a clean, consistent all-day cup that maximizes the comforting Caramel and Chocolate notes.

Espresso: Use a Fine grind. This coffee is an excellent choice for espresso, providing a rich, balanced, and Sweet shot with a good body that pairs beautifully with milk for a Flat White or Latte.

French Press (Cafetière): Use a Coarse grind and steep for 4 minutes. This immersion method enhances the full body and deepens the complex Chocolate notes for a rich, satisfying cup.

About The Roastery

Mont58 Coffee is the passion project of husband-and-wife team, Shai and Maya. Their journey began quite literally at home in 2018, when they took the plunge and jacked in their full-time jobs to start roasting coffee in a humble garden shed in South-East London. Shai, whose passion for coffee was sparked by childhood memories of drinking cardamom-spiced coffee with his grandfather, honed his craft on a tiny 250g machine.

This small-batch venture quickly took off, especially during the lockdown when the local community wholeheartedly embraced their door-to-door, bike-delivered coffee.

While they have since scaled up to a larger roastery in Ashford, Kent, and opened further sites, the spirit of that original shed, small business, big heart, remains central to their award-winning, ethical, and community-focused mission. It's a proper 'started from the ground up' success story, but with significantly better beans.
