At times, Guatemala’s Finca Medina adds chocolate and floral tones for a rounded finish.

    The House Filter Blend features a rotating selection of no more than three seasonal coffees at any one time, chosen to maintain a consistent, balanced flavour profile.

    Brazil – Fazenda Sertão & Regional Selection
    Sourced from the Mantiqueira mountains of Carmo de Minas, these Brazilian coffees form the smooth, nutty foundation of the blend. Fazenda Sertão, a family-run farm spanning generations, grows Red and Yellow Bourbon, Catucai, and Catuai varieties alongside fruit and livestock in a self-sustaining ecosystem. Nearby, the Regional Selection coffees are grown at 1,000–1,300 metres above sea level, where the unique climate allows for slow ripening and exceptional sweetness.

    Peru – Cooperativa El Palto
    This organic-certified cooperative, founded in 2003 by 35 farmers and now home to over 350 members, reflects Chimney Fire’s commitment to long-term, ethical partnerships. The cooperative reinvests speciality premiums into local sustainability initiatives, from reforestation to training and infrastructure, all contributing to a cleaner, greener coffee future.

    Colombia – Huila & Popayán Reserves
    Sourced from smallholder farmers across Colombia, these washed coffees bring vibrancy and depth to the blend. The Huila Reserve unites growers cultivating traditional varieties such as Castillo, Caturra, and Tabi, while the Popayán Reserve, grown in rich volcanic soils at 1,700 metres, adds bright acidity and refined sweetness, the result of meticulous hand selection and drying on raised beds.

    Guatemala – Finca Medina
    Grown on the slopes of the Agua volcano near Antigua, Finca Medina combines modern precision with generations of craft. Certified by UTZ and Rainforest Alliance, the farm produces coffee with floral notes, chocolate tones, and balanced acidity. Beyond quality, Finca Medina champions sustainability and community, providing free healthcare and education programmes for its workers and their families.
