Origin & Farm: The Ethiopian Highlands

This coffee is sourced from the fertile highlands of southern Ethiopia, likely from the renowned Sidama or Yirgacheffe zones, regions that are considered the global standard for floral and citrus-forward coffee.

  • The Farmer/Co-operative: Given its organic status and high volume of production, this coffee is highly likely sourced from one of the major certified Organic Co-operative Unions (such as the SCFCU or OCFCU), which represent thousands of dedicated smallholder farmers. These farmers cultivate coffee on small garden plots (typically under one hectare).

  • The Terroir: The beans thrive at extreme elevations, often between 1,700 and 2,200 metres above sea level. This slow growth at high altitude leads to denser beans with highly concentrated sugars and the vibrant acidity necessary for the Lime Peel note.

  • The Varietal: The coffee consists of Ethiopian Heirloom Varietals. These are unique, naturally cross-pollinated indigenous Arabica varieties found nowhere else in the world, responsible for the incredible floral and complex aromas.

Farming Process & Organic Certification

Ethiopian coffee is traditionally grown without chemicals, but this lot carries the extra assurance of official Organic Certification, guaranteeing the highest level of purity and sustainability.

  • Organic Farming: Coffee in this region is typically grown under a shade canopy of native trees and crops, which protects the trees and naturally enriches the soil. No chemical fertilisers or pesticides are used, making the coffee naturally organic.

  • The Washed Process: The clean, bright flavours (Lime Peel, Jasmine) are a result of the meticulous Washed (Wet) Process:

    1. Cherries are selectively hand-picked and delivered to the mill.

    2. The fruit pulp is immediately removed.

    3. The beans are fermented briefly and then washed clean of any sticky residue.

    4. The clean parchment is dried on raised beds under the sun for a controlled period, resulting in a crisp, clean cup profile that highlights the inherent bright and floral flavours of the heirloom varietals.

Recommended Brew Methods

The delicate, complex, and aromatic nature of this Ethiopian coffee shines best in methods that allow for clean separation and highlight its vibrant acidity, making it perfect for drinking black.

  • Pour-Over (V60, Chemex): Use a Medium grind to showcase the Fragrant and Complex aromatics and clean, bright finish. Use water up to 96°C for optimal extraction.

  • Aeropress: Use a Medium-Fine grind and a slightly longer immersion time (around 1:30 minutes) to create a syrupy, deep body that truly carries the complex fruit and floral sweetness.

  • Batch Brew / Filter: Use a Medium grind for an excellent, vibrant, all-day coffee. It delivers a clean, sweet cup that is far more complex than a typical filter coffee.

About The Roastery

Mont58 Coffee is the passion project of husband-and-wife team, Shai and Maya. Their journey began quite literally at home in 2018, when they took the plunge and jacked in their full-time jobs to start roasting coffee in a humble garden shed in South-East London. Shai, whose passion for coffee was sparked by childhood memories of drinking cardamom-spiced coffee with his grandfather, honed his craft on a tiny 250g machine.

This small-batch venture quickly took off, especially during the lockdown when the local community wholeheartedly embraced their door-to-door, bike-delivered coffee.

While they have since scaled up to a larger roastery in Ashford, Kent, and opened further sites, the spirit of that original shed, small business, big heart, remains central to their award-winning, ethical, and community-focused mission. It's a proper 'started from the ground up' success story, but with significantly better beans.
